Drying/maturing cabinet
The drying cabinets, like the Smoki smokers, have a base area of 39x33 cm, making them compatible with most equipment options. The drying cabinets are available in heights from 70 cm to 150 cm and in SMOKI materials ranging from aluminized steel sheet to stainless steel. For monitoring and regulation, the oven is equipped with a thermometer and a hygrometer. The SMOKI drying cabinet is excellent for fly-proof storage before or after smoking. For monitoring purposes, the oven is equipped with a temperature and humidity display. In addition, if properly set up, it can also be used for curing or drying:
Drying:
To prevent your sausages from becoming "shriveled," a high humidity is necessary; either the moisture from production in the cabinet already provides the appropriate environment (dripping wet) or you can support it with a (possibly steaming) bowl of water.
Curing:
After a certain time, you can support the aging process with a salt bowl. Mold prevention, pest control: the oven is fly-proof, ventilations are punched and provide for their arrangement and adjustability for natural ventilation. The affordable alternative to expensive curing cabinets - ideal for home use and DIY.
