In the upper area, there is a ventilation flap inside the oven that can be operated from the outside. For this purpose, the upper part of the oven is sloped and insulated up to 80 mm thick, so that the air circulation causes the drying air or smoke to escape into the smoke outlet or to run off to the side instead of dripping onto the food to be smoked. This smoke outlet in turn has a T-piece, which is designed as a "baffle plate" inside and where moisture or condensation is deposited. Underneath there is a condensate pot from which the moisture can run out.
The condensate plate is designed in such a way that it provides insect protection when burning through (closed) and prevents vermin from entering.
An all-round successful oven specially tuned by our master craftsman Karl-Heinz Lauscher - as a child looking over the shoulders of the old Löningen oil barrel smokers - and now 60 years later bringing together the experience of 50 years of sheet metal production and smoking. A must for every meat processor.
But also salmon sides can be smoked lying down in whole pieces due to the enormous width, of course warm smoking is also possible. The 30mm thick insulation designed to control condensation also plays to its strengths in this area, the Smoki 2300 Watt heater is sufficient even for this large volume.
The support surface measures 600x400mm and can be used on 8 levels. The flue pipe can be mounted either on the right or on the left.
The outer dimension is 1200x670x480mm plus the smoke outlet.

Those who smoke commercially should opt for the V2A 1.4301 stainless steel.
For private use, the inexpensive version made of sheet steel coated with aluminium is sufficient.
The 1.4016 Cr stainless steel version is suitable for the private smoker who smokes a lot; this version has an optical upgrade due to the embossed structure.
