Like the Smoki smoke ovens, the drying cabinets have a base area of 39 x 33 cm and are therefore compatible with most configuration options.
The drying cabinets are available in heights ranging from 70 cm to 150 cm and in SMOKI materials ranging from aluminium-coated sheet steel to stainless steel.
For monitoring and control, the cabinet is fitted with a thermometer and hygrometer.
The SMOKI drying cabinet is ideal for fly-proof storage before or after smoking. For monitoring, the cabinet is fitted with a temperature and humidity display.
Furthermore, when positioned correctly, it can also be used for curing or drying:
Drying:
to prevent your sausages from becoming ‘shrivelled’, high humidity is required; either the moisture from the production process inside the cabinet already provides a suitable environment (dripping wet), or you can assist this with a (possibly steaming) bowl of water.
Maturation:
After a certain period, you can aid the maturation process with a bowl of salt.
Mould prevention, pest control:
The oven is fly-proof; ventilation holes are punched into the sides and, thanks to their arrangement and adjustability, ensure natural ventilation.
The affordable alternative to expensive maturing cabinets – ideal for home use and DIY projects.
