SafePro® F-LC is a freeze-dried microorganism culture for fermented meat products. The culture controls the
acidification process, supports colour and aroma formation, and helps to control the growth of Listeria monocytogenes.
Composition of the culture:
Lactobacillus curvatus
Pediococcus acidilactici
Staphylococcus xylosus
Use
This culture is suitable for traditionally matured raw sausages. The culture supports characteristic aroma formation and
is equally suitable for smoked and blue-veined raw sausages. The culture metabolises
sucrose very slowly. It is therefore recommended to use glucose (dextrose) as a carbohydrate source. The
final pH value can be adjusted by adjusting the amount of available, metabolisable sugars.

25 g per 100 kg
Instructions for use
The entire contents of the bag are added together with the other dry, powdered ingredients at the beginning of the mixing or
grinding process to ensure even distribution in the final product. For better distribution,
the bag contents can be dissolved in drinking water before adding to the meat mixture. For further recommendations or
